Seasonal Recipes: Peanut butter blossoms

By; Austin Bailey-Zimmerman

In honor of Christmas time which just passed, I decided to bake these delicious peanut butter blossoms. They were so easy and fun to make, and I even decided to double the recipe because I enjoyed them so much!

I made these with my grandmother and my mom. It’s a family tradition for us to make these every Christmas. We have had this recipe in our family for a very long time, and I am glad because they make my mouth water every time.

I have these cookies as dessert, with some hot tea, or just as a snack. They are perfect bite-sized cookies, and the savory peanut butter cookie is paired perfectly with the sweet chocolate kiss on top. The outside of the cookie is crunchy, and surrounded by sugar, and the inside is soft and chewy. I have enjoyed these so much, so I shared them with the rest of my family and friends. You can do the same with this recipe! Enjoy!

Ingredients:

  • 1⁄2 cup granulated sugar
  • 1⁄2 cup packed brown sugar
  • 1⁄2 cup creamy peanut butter
  • 1⁄2 cup butter, softened
  • 1egg
  • 1 1⁄2 cups flour
  • 3⁄4 teaspoon baking soda
  • 1⁄2 teaspoon baking powder
  • 1⁄4 cup sugar
  • 1 Bag of Hershey’s kisses milk chocolate candies, unwrapped

Directions:

  1. Heat oven to 375°F.
  2. In a large bowl, beat the sugars, peanut butter, butter and egg with an electric mixer on medium speed, or mix with a spoon, until well blended.
  3. Stir in flour, baking soda and baking powder until dough forms.
  4. Shape dough into 1-inch balls; roll in additional granulated sugar.
  5. On ungreased cookie sheets, place the balls about 2 inches apart.
  6. Bake for 8-10 mins or until edges are light golden brown.
  7. Immediately press 1 milk chocolate candy into the center of each cookie.
  8. Remove from cookie sheets to a cooling rack. (Put in freezer to cool faster)
  9. Enjoy!
